Trebbiano di Spagna

This wine is obtained from Trebbiano di Spagna grapes, an indigenous grape variety selected in “Via Spagna” of Castelvetro di Modena in 1400, historically used for the production of traditional balsamic vinegar of Modena.

The grapes are hand-picked and vinified according to the ancestral method, a traditional winemaking technique fermenting the wine exclusively in the bottle.
The wine, aged on lees, produces a sediment that guarantees the genuineness of the winemaking process.

 

WHY TRIBOLO?

Because as the italian name suggests, it is a wine that causes a lot of "troubles".
The difficulties arise in the vineyard with very low production (it’s difficult to reach 50 quintals/ha) and continue
during pressing as the extremely acinellated bunches make the process very complicated.
On average, 1200 to 1600 bottles are produced per year, on which we have decided to
do not affix any labels (except for one on the back with the mandatory information).
